  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 1/2 cups orzo pasta
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 cup baby spinach, roughly chopped
  • Juice of 1 lemon
  • Fresh parsley, chopped, for garnish

Instructions

  • Heat olive oil in a large pot over medium-high heat.
  • Season the chicken pieces with salt and black pepper. Add to the pot and cook until browned on all sides, about 5-6 minutes. Remove the chicken and set aside.
  • In the same pot, add the diced onion and bell pepper. Sauté until soft, about 3-4 minutes.
  • Add the minced garlic and cook for 1 more minute until fragrant.
  • Stir in the orzo, diced tomatoes with their juice, chicken broth, oregano, thyme, and paprika. Bring to a boil, then reduce to a simmer.
  • Return the cooked chicken to the pot and continue cooking for 10-12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  • Stir in the chopped spinach and cook until wilted, about 2 minutes.
  • Squeeze lemon juice over the dish and stir. Adjust seasoning with salt and black pepper if needed.
  • Garnish with fresh parsley and serve warm.
