1 teaspoon sugar
1 teaspoon salt

1 teaspoon dried thyme
3 cups vegetable broth
2 cups water
12 oz pasta (spaghetti, linguine, or fettuccine)
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup heavy cream
Fresh parsley, chopped (optional, for garnish)
Instructions
Heat butter in a large pot over medium heat. Add sliced onions and cook for 20-25 minutes, stirring often, until deeply caramelized. Sprinkle in sugar halfway through cooking to enhance caramelization.
Add garlic, salt, pepper, and thyme, and sauté for 1-2 minutes until fragrant.
Pour in vegetable broth and water. Bring the mixture to a boil.
Add the pasta, ensuring it is submerged in the liquid. Stir occasionally, cooking until the pasta is tender and most of the liquid is absorbed (about 10-12 minutes).
Lower the heat and mix in mozzarella, Parmesan, and heavy cream until the sauce becomes creamy and coats the pasta evenly.
