Savor the rich flavors of one-pot French onion pasta, a comforting dish packed with caramelized onions, creamy cheese, and al dente pasta.

Ingredients

Scale
  • 3 tablespoons butter
  • 2 large yellow onions, thinly sliced
  • 3 garlic cloves, minced
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 3 cups vegetable broth
  • 2 cups water
  • 12 oz pasta (spaghetti, linguine, or fettuccine)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Heat butter in a large pot over medium heat. Add sliced onions and cook for 20-25 minutes, stirring often, until deeply caramelized. Sprinkle in sugar halfway through cooking to enhance caramelization.
  • Add garlic, salt, pepper, and thyme, and sauté for 1-2 minutes until fragrant.
  • Pour in vegetable broth and water. Bring the mixture to a boil.
  • Add the pasta, ensuring it is submerged in the liquid. Stir occasionally, cooking until the pasta is tender and most of the liquid is absorbed (about 10-12 minutes).
  • Lower the heat and mix in mozzarella, Parmesan, and heavy cream until the sauce becomes creamy and coats the pasta evenly.
  • Serve warm, garnished with fresh parsley if desired.

Notes

  • Adjust the seasoning to your taste, adding more salt or pepper if needed.
  • Use freshly shredded cheese for the best melting and texture.
  • Leftovers can be stored in an airtight container for up to 3 days. Reheat gently on the stovetop or microwave, adding a splash of broth if needed to loosen the sauce.
