  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup orange juice (freshly squeezed)
  • 1 tbsp orange zest
  • 2 tbsp melted butter
  • 1 large egg
  • 1 ½ cups fresh or frozen cranberries (coarsely chopped)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix orange juice, orange zest, melted butter, and the egg until combined.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the cranberries.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra citrusy kick, add more orange zest.
  • Substitute dried cranberries if fresh or frozen are unavailable, but reduce sugar slightly.
  • Store in an airtight container for up to 3 days or freeze for longer storage.
