  • 12 oz orecchiette pasta
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 10 oz halal sausage, crumbled
  • 6 oz fresh spinach, washed and chopped
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  • Cook the orecchiette in salted boiling water according to package instructions. Reserve 1 cup of pasta water, then drain.
  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until soft and translucent.
  • Add the minced garlic and cook for 1 minute until fragrant.
  • Stir in the crumbled sausage and cook until browned and cooked through.
  • Add the chopped spinach and cook until wilted, about 2-3 minutes.
  • Toss the cooked orecchiette into the skillet with the sausage and spinach mixture. Mix well to combine.
  • If the dish seems dry, gradually add reserved pasta water until desired consistency is achieved.
  • Season with red pepper flakes, salt, and black pepper to taste.
