Ingredients

  • 4 chicken thighs or drumsticks
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a baking dish, spread rice evenly and pour chicken broth over it.
  3. Sauté onion and garlic in olive oil until softened, then spread over the rice.
  4. Season chicken with paprika, thyme, salt, and pepper, then place on top of the rice.
  5. Cover with foil and bake for 30 minutes.
  6. Remove foil and bake for an additional 15-20 minutes until chicken is golden and rice is fully cooked.
  7. Let rest for 5 minutes before serving.
