  • 2 lbs beef sirloin or flank steak, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 3 garlic cloves, minced
  • 1/2 cup soy sauce
  • 1/3 cup beef broth
  • 1 tbsp honey or brown sugar
  • 1 tbsp cornstarch (optional, for thickening)
  • 1 tsp black pepper
  • 1 tsp ginger (ground or fresh)
  • 1 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a skillet over medium heat and sear the beef strips until browned.
  2. Place the beef, bell peppers, and onion in the crock pot.
  3. In a bowl, mix soy sauce, beef broth, honey, garlic, black pepper, and ginger. Pour the mixture over the beef and veggies.
  4. Cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
  5. If desired, mix cornstarch with water and stir into the crock pot during the last 30 minutes to thicken the sauce.
  6. Serve over rice or noodles and enjoy!
