  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • ½ tsp salt
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup milk
  • 1 ½ cups chocolate chips
  • Cream cheese frosting or buttercream (for layering and frosting)

Instructions

  • Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  • In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  • In a separate large bowl, beat together pumpkin puree, granulated sugar, brown sugar, and vegetable oil until smooth.
  • Add the eggs, one at a time, and then stir in the vanilla extract.
  • Alternately add the dry ingredients and milk into the wet mixture, starting and ending with the dry ingredients.
  • Fold in the chocolate chips.
  • Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  • Let the cakes cool completely before frosting with cream cheese or buttercream frosting.

Notes

  • Use mini chocolate chips for better distribution throughout the cake layers.
  • Substitute butter for oil if you prefer a richer flavor.
