Enjoy a flavor-packed Rachel sandwich featuring savory turkey slices, melted Swiss cheese, crunchy coleslaw, and creamy Russian dressing, all stacked between warm, crispy rye bread. Perfect for lunch or dinner!

  • 8 slices of rye bread
  • 1 lb sliced turkey breast
  • 8 slices of Swiss cheese
  • 2 cups coleslaw
  • ½ cup Russian dressing
  • 2 tablespoons unsalted butter, softened

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Spread softened butter on one side of each slice of rye bread.
  3. On the non-buttered side of four slices, layer turkey, Swiss cheese, and a generous amount of coleslaw.
  4. Drizzle Russian dressing over the coleslaw and top with the remaining slices of bread, buttered side up.
  5. Place the sandwiches on the skillet and grill for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  6. Remove from the skillet, let cool for a minute, and then slice in half. Serve immediately.

Notes

  • Feel free to adjust the amount of coleslaw and dressing for a preferred taste.
  • For added crunch, toast the rye bread slightly before assembling.
