  • 4 large flour tortillas
  • 1 cup shredded cooked chicken (or turkey)
  • 1 cup sauerkraut, drained
  • 1 cup shredded Swiss cheese
  • 4 tablespoons Thousand Island dressing
  • 2 tablespoons butter or oil for cooking

Instructions

  • Heat a skillet over medium heat.
  • Spread 1 tablespoon of Thousand Island dressing on each tortilla.
  • Layer shredded chicken, sauerkraut, and Swiss cheese on one half of each tortilla.
  • Fold each tortilla in half to create a semicircle.
  • Add butter or oil to the skillet and cook the quesadilla for 2–3 minutes per side until golden and the cheese is melted.
