Ingredients

Scale
  • 8 slices rye bread
  • 1 lb roast beef, thinly sliced
  • 1 cup sauerkraut, drained
  • 4 slices Swiss cheese
  • 1/2 cup Thousand Island dressing (or your favorite creamy dressing)
  • 2 tbsp butter (softened for spreading)

Instructions

  • Spread a thin layer of butter on one side of each slice of bread.
  • On the unbuttered side, spread Thousand Island dressing evenly.
  • Layer roast beef, sauerkraut, and a slice of Swiss cheese on 4 slices of bread (unbuttered side).
  • Top with the remaining 4 slices of bread, buttered side facing outward.
  • Heat a skillet or griddle over medium heat. Grill the sandwiches for 3-4 minutes per side until the bread is golden and crispy, and the cheese is melted.
