Ingredients

  • Ground beef or sausage
  • Rotel diced tomatoes and green chilies (1 can)
  • Pasta (penne, macaroni, or your choice)
  • Cream cheese
  • Cheddar cheese, shredded
  • Onion, chopped
  • Garlic, minced
  • Olive oil
  • Salt
  • Pepper
  • Paprika (optional)
  • Fresh parsley or cilantro (for garnish)

Instructions

  • Cook pasta according to package instructions; drain and set aside.
  • In a skillet, heat olive oil and sauté onion and garlic until softened. Add ground beef, season with salt, pepper, and paprika, and cook until browned. Drain excess fat.
  • Stir in the can of Rotel tomatoes (with juices) and cook for 2-3 minutes.
  • Lower the heat and add cream cheese, stirring until melted and creamy.
  • Toss in the cooked pasta and mix well to coat with the sauce. Stir in shredded cheddar cheese until melted and fully combined.

Notes
