  • 1 lb (450g) sausages
  • 1 can (15 oz) cannellini beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • Heat olive oil in a large oven-safe skillet over medium heat.
  • Add sausages and cook until browned on all sides. Remove and set aside.
  • In the same skillet, sauté onions and garlic until soft.
  • Stir in smoked paprika, thyme, salt, and pepper.
  • Add diced tomatoes, chicken broth, and both beans, mixing well.
  • Return sausages to the skillet, cover, and let it simmer for 10 minutes.
  • Transfer the skillet to a preheated oven at 350°F (175°C) and bake for 30 minutes.
  • Serve hot, garnished with fresh herbs if desired.
