Ingredients

Scale
  • 1 lb smoked sausage (kielbasa or your favorite variety), sliced
  • 4 medium potatoes, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Cook the potatoes:
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with garlic powder, paprika, salt, and pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside and tender on the inside. Remove from the skillet and set aside.
  • Cook the sausage and onions:
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced sausage and cook for 3-4 minutes until browned. Add the diced onion and cook for another 3-4 minutes, stirring occasionally, until the onions are softened.
  • Add the garlic:
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Combine potatoes and sausage:
Return the cooked potatoes to the skillet with the sausage and onions. Toss everything together and cook for another 2-3 minutes until heated through.
  • Serve hot:
Garnish with fresh parsley if desired, and serve immediately. Enjoy with a side salad or as a stand-alone meal.

Notes

  • For extra flavor, add bell peppers or use spicy sausage.
  • You can also roast the potatoes separately in the oven for added crispiness.
