  • 2 large sweet potatoes, peeled and cubed
  • 4 sausages (chicken, pork, or turkey), sliced
  • 2 tbsp olive oil
  • 3 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard
  • ½ tsp smoked paprika
  • Salt and pepper to taste

 

  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, salt, pepper, and smoked paprika on a baking sheet. Roast for 20 minutes.
  3. In a pan, cook the sliced sausages over medium heat until browned, about 5-7 minutes.
  4. In a small bowl, mix honey, minced garlic, soy sauce, and Dijon mustard.
  5. Add the roasted sweet potatoes to the pan with sausages and pour the honey garlic sauce over. Stir well to coat.
  6. Cook for another 5 minutes until everything is well combined and caramelized.
  7. Garnish with fresh parsley and serve warm.
