Sausage Green Bean Potato Casserole is a hearty, comforting dish made with smoked sausage, tender baby potatoes, and fresh green beans, all seasoned and baked to perfection. This simple, one-pan meal is easy to prepare and full of flavor, making it ideal for busy weeknights.   • 1 lb smoked sausage, sliced
  • 1 lb baby potatoes, halved
  • 1 lb fresh green beans, trimmed
  • 1 medium onion, diced
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional for garnish)

Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss the halved baby potatoes with 2 tbsp of olive oil, garlic powder, onion powder, paprika, salt, and pepper. Spread them evenly on a greased baking sheet or casserole dish.
  • Roast the potatoes for 20 minutes until they start to become tender.
  • In the same bowl, toss the green beans and onion with the remaining 1 tbsp of olive oil, then add to the baking sheet with the potatoes. Stir in the sliced sausage.
  • Continue roasting for another 15-20 minutes, until the sausage is browned, the potatoes are golden, and the green beans are tender.
  • Remove from the oven and sprinkle with Parmesan cheese, if desired. Serve hot.

Notes

  • For extra flavor, add a squeeze of lemon juice over the dish before serving.
  • You can substitute chicken sausage for a lighter version.
  • Use frozen green beans if fresh aren't available; just adjust the cooking time slightly.
