  • 1 pound halal sausage, sliced or crumbled
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper, to taste
  • 10 ounces cheese tortellini (fresh or frozen)
  • 3 cups fresh spinach, roughly chopped
  • 1/3 cup heavy cream (optional)
  • Freshly grated Parmesan cheese, for serving
  • Fresh basil or parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned, about 5-7 minutes. Remove any excess grease if necessary.
  2. Add the diced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute.
  3. Pour in the chicken or vegetable broth and water, scraping the bottom of the pot to deglaze. Add diced tomatoes and Italian seasoning, then season with salt and pepper.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes to let the flavors meld together.
  5. Stir in the tortellini and cook until tender, following the package instructions (usually 5-7 minutes).
  6. Add the chopped spinach and heavy cream (if using), stirring until the spinach wilts and everything is well combined. Adjust seasoning as needed.
