For the Meatloaf:
1 lb ground beef (or turkey)
1/2 cup breadcrumbs
1/4 cup milk
1/4 cup ketchup
1 egg
1/2 small onion, finely chopped
1 tsp garlic powder
1 tsp Worcestershire sauce
1/2 tsp salt
1/2 tsp black pepper
For the Mashed Potato Frosting:
2 large potatoes, peeled and cubed
1/4 cup milk
2 tbsp butter
Salt & pepper to taste
Instructions
Preheat oven to 375°F (190°C). Grease a muffin tin.
Prepare meatloaf mixture by combining all meatloaf ingredients in a bowl. Mix well.
Fill muffin tin with meatloaf mixture, pressing down slightly. Bake for 20-25 minutes or until cooked through.
Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, milk, salt, and pepper.
