For the Meatloaf:

  • 1 lb ground beef (or turkey)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 1 egg
  • 1/2 small onion, finely chopped
  • 1 tsp garlic powder
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Mashed Potato Frosting:

 

  • 2 large potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt & pepper to taste

Instructions

  • Preheat oven to 375°F (190°C). Grease a muffin tin.
  • Prepare meatloaf mixture by combining all meatloaf ingredients in a bowl. Mix well.
  • Fill muffin tin with meatloaf mixture, pressing down slightly. Bake for 20-25 minutes or until cooked through.
  • Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, milk, salt, and pepper.

 

  • Pipe or spoon mashed potatoes onto baked meatloaf muffins. Serve warm.

Notes

  • Use a piping bag for a decorative mashed potato topping.
  • Swap beef for ground turkey or chicken for a lighter version.

 

  • Add shredded cheese to the mashed potatoes for extra flavor.
