This sheet pan oven grilled cheese recipe delivers perfectly crisp bread and melty cheese. A no-fuss method for delicious, cheesy sandwiches made right in your oven. Great for family meals or quick comfort food!

  • 8 slices of bread (white, whole wheat, or sourdough)
  • 4 tablespoons unsalted butter, softened
  • 8 slices of your favorite cheese (cheddar, mozzarella, or a mix)
  • Optional: 2 tablespoons of mayonnaise (for spreading on bread)

Instructions

  • Preheat the oven to 425°F (220°C). Line a sheet pan with parchment paper or lightly grease it.
  • Spread a thin layer of softened butter on one side of each slice of bread. For extra crispiness, you can use mayonnaise instead.
  • Place 4 slices of bread, butter-side down, onto the prepared sheet pan. Top each slice with 2 slices of cheese.
  • Cover the cheese with the remaining 4 slices of bread, butter-side up.
  • Place a second sheet pan on top of the sandwiches to gently press them down.
  • Bake in the preheated oven for 6-8 minutes. Remove the top sheet pan, flip the sandwiches, and bake for another 6-8 minutes, or until golden brown and crispy.
  • Let cool for 1-2 minutes before serving.

  • For extra flavor, try adding sliced tomatoes, cooked chicken, or spinach between the cheese layers.
