12 oz pasta (linguine or fettuccine)
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
3 cloves garlic, minced
1/2 tsp red pepper flakes (optional)
1/2 cup dry white wine
1 cup canned crushed tomatoes
1/2 cup heavy cream
Salt and pepper, to taste
1/4 cup grated Parmesan cheese
Fresh basil or parsley, chopped (for garnish)
Cook pasta according to package instructions. Reserve 1/2 cup pasta water, then drain.
In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, sauté for 1 minute.
Add shrimp and cook 2–3 minutes per side until pink. Remove and set aside.
Pour in white wine and simmer 2–3 minutes. Add crushed tomatoes and cook for 5 minutes.
