  • 5 large russet potatoes, peeled and cubed
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup chopped yellow onion
  • 1/4 cup melted unsalted butter
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions

  • Spray the inside of the slow cooker with non-stick cooking spray.
  • In a large bowl, mix together potatoes, cheddar cheese, cream of chicken soup, sour cream, chopped onion, melted butter, salt, and pepper.
  • Pour the mixture into the slow cooker and spread evenly.
