This Slow Cooker Chicken Gnocchi Soup recipe is a creamy and hearty dish filled with chicken, gnocchi, and fresh vegetables.

  • 1 lb boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 2 cups heavy cream
  • 1 cup diced carrots
  • 1 cup chopped celery
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1 lb potato gnocchi
  • 2 cups fresh spinach leaves, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Place chicken, broth, carrots, celery, onion, garlic, thyme, basil, salt, and pepper into the slow cooker.
  2. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  3. Shred the chicken directly in the slow cooker using two forks.
  4. Stir in heavy cream, gnocchi, and spinach. Cook on high for another 20-30 minutes until gnocchi is tender.
  5. Sprinkle with Parmesan cheese before serving.

Notes

  • For a thicker soup, you can add 1 tbsp cornstarch mixed with 2 tbsp water during the final 30 minutes.
