  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1 can (10.5 oz) cream of mushroom soup
  • 3 medium potatoes, diced
  • 1 ½ cups shredded cheddar cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen corn
  • ½ cup beef broth
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp chili powder

Instructions

  1. In a skillet over medium heat, cook the ground beef and onion until browned. Drain excess fat.
  2. Add garlic and cook for another minute.
  3. In the slow cooker, layer potatoes, cooked beef mixture, beans, corn, and diced tomatoes.
  4. Stir in beef broth, cream of mushroom soup, salt, pepper, paprika, and chili powder.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours, until potatoes are tender.
  6. In the last 15 minutes, sprinkle shredded cheese on top and cover until melted.
  7. Serve warm and enjoy!
