  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups beef broth
  • 1/2 cup pepperoncini peppers, sliced (plus juice from jar)
  • 1/4 cup giardiniera (optional)
  • 6-8 hoagie or Italian rolls
  • 6-8 slices provolone or mozzarella cheese
  • Fresh parsley for garnish (optional)

Instructions

  • Prepare the beef:
    Season the beef chuck roast with garlic powder, onion powder, oregano, basil, and red pepper flakes (if using). Place the roast in the slow cooker.
  • Add liquid and peppers:
    Pour the beef broth around the roast. Add the Italian dressing seasoning mix, pepperoncini peppers (plus a little juice from the jar), and giardiniera (optional).
  • Cook the beef:
    Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender and easily shreds with a fork.
  • Shred the beef:
    Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and mix with the juices.
  • Assemble the sandwiches:
    Preheat your oven to 350°F (175°C). Slice open the hoagie rolls and place them on a baking sheet. Pile the shredded beef onto each roll and top with a slice of cheese.
  • Melt the cheese:
