  • 4 large flour tortillas
  • 2 cups shredded cooked chicken
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1 cup enchilada sauce
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes (optional, for garnish)
  • 1/4 cup chopped fresh cilantro (optional, for garnish)
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix shredded chicken, rice, black beans, chili powder, cumin, garlic powder, salt, and pepper.
  3. Spread a spoonful of enchilada sauce onto each tortilla. Add chicken mixture and a sprinkle of cheese, then roll tightly into a burrito.
  4. Place burritos seam-side down in a baking dish. Pour remaining enchilada sauce over the burritos and sprinkle with extra cheese.
  5. Bake for 20-25 minutes, until cheese is melted and bubbly.
  6. Remove from oven and garnish with diced tomatoes and cilantro, if desired. Serve with sour cream on the side.
