1 cup cornmeal
½ cup all-purpose flour
2 tbsp sugar
1 tsp baking powder
½ tsp salt
½ cup buttermilk
1 egg
¼ cup melted butter
2 tbsp honey
1 tsp vanilla extract
Oil for frying
Instructions
In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
In another bowl, mix buttermilk, egg, melted butter, honey, and vanilla.
Combine wet and dry ingredients, stirring until smooth.
Heat oil in a pan to 350°F (175°C).
Scoop batter into small rounds and fry until golden brown.
Drain on paper towels and drizzle with extra honey butter before serving.
