  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • 200g beef or turkey bacon, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup heavy cream (optional for extra creaminess)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  • In a bowl, whisk together eggs, Parmesan cheese, and a pinch of black pepper. Set aside.
  • Heat olive oil in a large skillet over medium heat. Add diced beef or turkey bacon and cook until crisp. Stir in minced garlic and cook for 1 minute.
  • Reduce the heat to low. Add the drained spaghetti to the skillet and toss to combine with the bacon and garlic.
  • Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta, tossing vigorously to create a creamy sauce. Add reserved pasta water, 1 tablespoon at a time, if needed to loosen the sauce.
  • Adjust seasoning with salt and pepper. Garnish with fresh parsley and serve immediately.
