  • 1 cup sushi rice

  • 2 tbsp rice vinegar

  • 1 tsp sugar

  • 1/2 tsp salt

  • 1/2 lb cooked shrimp, chopped

  • 2 tbsp mayonnaise

  • 1 tbsp sriracha

  • 1 avocado, diced

  • 1/2 cucumber, diced

  • 1 sheet nori, crumbled

  • Soy sauce, for drizzling

  • Sesame seeds, for garnish

  • Green onions, sliced, for garnish

Instructions

  • Cook sushi rice according to package instructions. Mix with rice vinegar, sugar, and salt. Let cool.

  • In a bowl, mix chopped shrimp with mayonnaise and sriracha.

  • In a ring mold or ramekin, layer 1/4 cup sushi rice, a spoonful of avocado and cucumber, then spicy shrimp.

  • Press gently to shape.

  • Carefully unmold onto a plate.

  • Top with crumbled nori, sesame seeds, green onions, and a drizzle of soy sauce.

 

  • Repeat to make 4 stacks.

Notes

You can customize the spice level by adjusting the amount of sriracha. Great as an appetizer or light meal.
