  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 cup chicken broth (or vegetable broth for vegetarian)
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional for heat)
  • Salt and pepper to taste
  • 1 tbsp apple cider vinegar (optional)
  • Fresh parsley or thyme, chopped (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes, until softened.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Stir in sliced okra, diced tomatoes, chicken broth, smoked paprika, cayenne pepper (if using), salt, and pepper. Bring to a simmer.
  • Cover and cook for 15-20 minutes, stirring occasionally, until the okra is tender and the flavors have melded.
  • Stir in apple cider vinegar (if using) for a tangy kick, and adjust seasoning as needed.
  • Garnish with fresh parsley or thyme and serve warm.

Notes
