  • 4 boneless, skinless chicken breasts
  • 1 cup mozzarella or cheddar cheese, shredded
  • 1/2 cup spinach (optional)
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Toothpicks (to secure the stuffing)

Instructions

  • Preheat oven to 375°F (190°C).
  • Butterfly the chicken breasts by slicing them horizontally, without cutting all the way through.
  • In a bowl, mix cheese, spinach, garlic, and seasonings.
  • Stuff each chicken breast with the cheese mixture and secure with toothpicks.
  • Season the outside of the chicken with salt, pepper, paprika, and oregano.
  • Heat olive oil in a skillet over medium heat and sear the chicken on both sides until golden, about 2-3 minutes per side.
  • Transfer chicken to a baking dish and bake for 20-25 minutes until cooked through.
  • Let rest for 5 minutes before serving.
