Ingredients

  • 8 oz. pasta (penne or fusilli)

  • 1 ½ cups cherry tomatoes, halved

  • 1 ½ cups fresh mozzarella balls, halved or quartered

  • ½ cup fresh basil leaves, chopped

  • 3 tbsp olive oil

  • 1 ½ tbsp balsamic vinegar

  • 1 tsp Dijon mustard

  • Salt and pepper to taste

  • Optional: ¼ tsp garlic powder or minced garlic

Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water to cool.

  2. In a large bowl, combine cooled pasta, halved cherry tomatoes, mozzarella, and chopped basil.

  3. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, pepper, and optional garlic.

  4. Pour the dressing over the pasta mixture and toss to combine.

  5. Chill in the refrigerator for at least 30 minutes before serving.
