  • 8 oz pasta (spaghetti or soba noodles)

  • 2 tbsp sesame oil

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp honey or maple syrup

  • 1 tbsp sesame seeds

  • 1 garlic clove, minced

  • 1 tsp grated ginger

  • 1/4 cup chopped green onions

  • 1/4 cup shredded carrots

  • 1/4 cucumber, julienned

  • Optional: chili flakes for heat

Instructions

  • 8 oz pasta (spaghetti or soba noodles)

  • 2 tbsp sesame oil

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp honey or maple syrup

  • 1 tbsp sesame seeds

  • 1 garlic clove, minced

  • 1 tsp grated ginger

  • 1/4 cup chopped green onions

  • 1/4 cup shredded carrots

  • 1/4 cucumber, julienned

  • Optional: chili flakes for heat

Instructions:

  1. Cook the pasta according to package instructions, then drain and rinse with cold water to cool down.

  2. In a large bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, sesame seeds, garlic, and ginger.

  3. Add the cooled noodles to the bowl and toss to coat with the dressing.

  4. Stir in green onions, shredded carrots, and cucumber.

  5. If desired, add chili flakes for a bit of heat.

  6. Serve immediately or refrigerate for an hour before serving for a colder option

Notes

  • You can make this dish ahead of time and store it in the fridge for up to 2 days.
