2 ripe avocados
12 oz pasta (spaghetti or linguine)
1 garlic clove, minced
1 tablespoon olive oil
2 tablespoons lemon juice
½ cup fresh basil leaves
Salt and pepper to taste
½ cup cherry tomatoes (optional)
¼ cup grated Parmesan (optional)
Cook the pasta according to package instructions, then drain and set aside.
In a blender or food processor, combine the avocado, garlic, olive oil, lemon juice, and fresh basil. Blend until smooth and creamy.
Season with salt and pepper to taste.
