  • 1/2 cup granulated sugar

  • 2 cups all-purpose flour

For the lemon filling:

  • 1 1/2 cups granulated sugar

  • 1/4 cup all-purpose flour

  • 4 large eggs

  • 2/3 cup fresh lemon juice

  • 1 tbsp lemon zest

  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish or line with parchment paper.

  2. In a bowl, cream together butter and sugar for the crust. Mix in flour and salt until crumbly.

  3. Press the crust mixture into the baking dish. Bake for 15–18 minutes until lightly golden.

  4. While the crust bakes, whisk together sugar and flour for the filling. Beat in eggs, lemon juice, and zest.

  5. Pour lemon mixture over the warm crust and return to the oven. Bake for another 20–25 minutes, until set.

  6. Let cool completely, then dust with powdered sugar. Cut into bars and serve.

Notes

  • For more intense lemon flavor, add a bit more zest.

  • Chill before cutting for cleaner slices.
