2/3 cup whole milk
1 tsp vanilla extract
1 lb fresh strawberries, hulled and sliced
2 tbsp sugar (for strawberries)
1 cup heavy whipping cream
2 tbsp powdered sugar
1/2 tsp vanilla extract (for whipped cream)
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, whisk flour, sugar, baking powder, and salt.
Cut in butter until mixture resembles coarse crumbs.
Add milk and vanilla; stir until just combined.
Drop 8 spoonfuls onto the baking sheet.
Bake for 12–15 minutes or until golden. Let cool.
Meanwhile, mix strawberries with sugar. Let sit for 20 minutes to macerate.
In a separate bowl, whip cream, powdered sugar, and vanilla until soft peaks form.
Split shortcakes in half, layer with strawberries and whipped cream, then top with the other half.
Use chilled butter for a flakier texture.
You can substitute store-bought whipped cream to save time.
Best enjoyed fresh on the day it's made.
