2 lbs ground beef (or ground pork/beef mix)
1 cup breadcrumbs
2 large eggs
1/2 cup milk
2 tbsp soy sauce
2 tbsp gochujang (Korean chili paste)
2 tbsp brown sugar
2 cloves garlic, minced
1 tbsp ginger, grated
1 small onion, finely chopped
1/4 cup green onions, chopped
1 tsp sesame oil
Salt and pepper, to taste
For the glaze:
3 tbsp ketchup
2 tbsp gochujang
2 tbsp honey
1 tbsp rice vinegar
1 tsp sesame seeds (optional)
Preheat oven to 375°F (190°C). Lightly grease a loaf pan.
In a large bowl, combine ground beef, breadcrumbs, eggs, milk, soy sauce, gochujang, brown sugar, garlic, ginger, onion, green onions, sesame oil, salt, and pepper.
Mix gently until fully combined. Avoid overmixing.
Transfer the mixture into the loaf pan and shape evenly.
In a small bowl, whisk together ketchup, gochujang, honey, and rice vinegar to create the glaze.
Spread half of the glaze over the meatloaf.
Bake uncovered for 45 minutes.
Remove from oven, apply remaining glaze, and bake an additional 15-20 minutes or until internal temperature reaches 160°F (71°C).
