Taco Casserole with Tortillas is a delicious, layered Tex-Mex casserole featuring seasoned ground beef, soft tortillas, salsa, and melted cheese. This easy-to-make dish is perfect for busy weeknights or family gatherings. With layers of tortillas and all your favorite taco toppings, it’s a hearty, flavorful meal that will satisfy any taco lover!

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa
  • 8 small flour or corn tortillas, cut into quarters
  • 2 cups shredded Mexican blend cheese
  • 1 cup sour cream (optional)
  • 1/4 cup chopped cilantro (optional for garnish)
  • 1/4 cup sliced black olives (optional)
  • 1 tbsp olive oil

Instructions

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat.
  • Add taco seasoning, diced tomatoes, black beans, and corn to the beef. Stir and cook for 3-4 minutes until well combined.
  • In a greased 9x13-inch casserole dish, layer half of the tortilla pieces, followed by half of the beef mixture.
  • Spread half of the salsa and cheese over the beef layer.
  • Repeat the layers with the remaining tortillas, beef mixture, salsa, and cheese.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let the casserole sit for 5 minutes before serving.
  • Optionally, top with sour cream, cilantro, and black olives before serving.

Notes

  • Substitute ground turkey or chicken for a lighter option.
  • Add jalapeños for extra spice or avocado slices for creaminess.
  • Can be made ahead and stored in the fridge until ready to bake.
