This Taco Pasta recipe combines the best of tacos and pasta in one delicious, family-friendly dish. Seasoned ground beef, pasta, and melted cheese come together for a quick and comforting meal that's perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 8 oz pasta (penne, rotini, or shells)
  • 1 packet taco seasoning (or homemade)
  • 1/4 cup water
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, green onions, jalapeños, fresh cilantro

Instructions

  • Cook the pasta:
    Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Drain and set aside.
  • Cook the ground beef:
    While the pasta cooks, heat olive oil in a large skillet over medium heat. Add ground beef and cook for 5-7 minutes until browned, breaking it apart as it cooks. Drain excess fat if needed.
  • Add taco seasoning and tomatoes:
    Stir in taco seasoning, water, and diced tomatoes. Cook for 2-3 minutes, allowing the flavors to combine.
  • Add broth and simmer:
    Stir in beef broth and bring the mixture to a simmer. Let it cook for 5 minutes, allowing the sauce to thicken slightly.
  • Combine with pasta and cheese:
    Add the cooked pasta to the skillet and stir to coat with the beef and sauce. Stir in shredded cheese and sour cream, mixing until the cheese is melted and the pasta is creamy.
  • Serve hot:
    Garnish with your favorite toppings such as diced tomatoes, green onions, jalapeños, or cilantro, and serve immediately.

Notes

  • For extra heat, add a pinch of cayenne pepper or diced jalapeños.
  • You can substitute ground turkey or chicken for a lighter option.
