1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup
1/2 cup sour cream
1 cup frozen mixed vegetables (optional)
2 cups shredded cheddar cheese
1 package (32 oz) frozen tater tots
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
2 tablespoons olive oil
Instructions
Preheat oven to 375°F (190°C).
Cook the ground beef:
In a large skillet, heat olive oil over medium heat. Add ground beef and diced onion. Cook until the beef is browned and the onions are soft, about 5-7 minutes. Drain any excess fat.
Season and mix:
Stir in minced garlic, garlic powder, onion powder, salt, and pepper. Cook for an additional 1-2 minutes. Then add cream of mushroom soup, sour cream, and mixed vegetables (if using). Stir to combine and let simmer for 3-4 minutes.
Assemble the casserole:
Transfer the beef mixture to a greased 9x13-inch casserole dish. Spread it out evenly, then sprinkle 1 cup of shredded cheddar cheese over the beef mixture.
Top with tater tots:
Arrange frozen tater tots in an even layer on top of the cheese.
Bake the casserole:

Add more cheese:
Remove the casserole from the oven and sprinkle the remaining cup of cheddar cheese on top. Bake for an additional 5 minutes, or until the cheese is melted and bubbly.
