This Tater Tot Casserole with Ground Beef recipe is a classic, hearty comfort food made with seasoned ground beef, creamy soup, and topped with crispy tater tots. Perfect for a quick family dinner or a potluck favorite!

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 cup frozen mixed vegetables (optional)
  • 2 cups shredded cheddar cheese
  • 1 package (32 oz) frozen tater tots
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the ground beef:
In a large skillet, heat olive oil over medium heat. Add ground beef and diced onion. Cook until the beef is browned and the onions are soft, about 5-7 minutes. Drain any excess fat.
  3. Season and mix:
Stir in minced garlic, garlic powder, onion powder, salt, and pepper. Cook for an additional 1-2 minutes. Then add cream of mushroom soup, sour cream, and mixed vegetables (if using). Stir to combine and let simmer for 3-4 minutes.
  4. Assemble the casserole:
Transfer the beef mixture to a greased 9x13-inch casserole dish. Spread it out evenly, then sprinkle 1 cup of shredded cheddar cheese over the beef mixture.
  5. Top with tater tots:
Arrange frozen tater tots in an even layer on top of the cheese.
  6. Bake the casserole:
Bake uncovered for 30-35 minutes, or until the tater tots are golden and crispy.
  7. Add more cheese:
Remove the casserole from the oven and sprinkle the remaining cup of cheddar cheese on top. Bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  8. Serve hot and enjoy!

Notes

  • For extra flavor, try adding a can of diced green chilies or cooked bacon bits to the beef mixture.
  • You can substitute cream of chicken soup if preferred.
