  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 onion, diced
  • 2 cups cooked rice
  • 1 cup crushed tortilla chips

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the ground beef with diced onion until browned. Drain excess fat.
  • Stir in the taco seasoning, black beans, corn, and diced tomatoes. Cook for 5 minutes.
  • In a greased 9x13-inch baking dish, layer the cooked rice, meat mixture, sour cream, and shredded cheese.
