Ingredients

  • 2 cups fresh pineapple, diced

  • 1 mango, peeled and diced

  • 1 cup strawberries, sliced

  • 1 kiwi, peeled and sliced

  • 1/2 cup shredded coconut (optional)

  • 1 tablespoon fresh mint, chopped

  • 2 tablespoons lime juice

  • 1 tablespoon honey

  • Pinch of salt

Instructions

  • In a large bowl, combine pineapple, mango, strawberries, and kiwi.

  • In a small bowl, whisk together lime juice, honey, and a pinch of salt.

  • Pour dressing over fruit and toss gently to combine.

  • Sprinkle shredded coconut and chopped mint on top.

 

  • Chill for 15 minutes before serving.
