  • 1 lb lean ground turkey
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 tbsp olive oil

Instructions

  • In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
  • Add the ground turkey to the pot and cook until browned, breaking it up as it cooks.
  • Stir in the red and green bell peppers, cooking for another 5 minutes.
  • Add the chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Mix well.
  • Pour in the diced tomatoes, kidney beans, black beans, and chicken broth. Stir to combine.
  • Bring the chili to a boil, then reduce the heat and let it simmer uncovered for 30 minutes, stirring occasionally.
  • Taste and adjust seasoning if necessary. Serve hot.

Notes

  • For a spicier chili, increase the amount of cayenne pepper.
  • This chili can be made a day in advance, as the flavors meld and improve over time.
  • Garnish with chopped cilantro, sour cream, or shredded cheese if desired.
