  • 3 lbs Yukon Gold potatoes, peeled and diced

  • 1 cup mayonnaise

  • 2 tbsp yellow mustard

  • 1 tbsp apple cider vinegar

  • 1/2 cup chopped celery

  • 1/2 cup chopped red onion

  • 1/4 cup chopped dill pickles or relish

  • 4 hard-boiled eggs, chopped

  • Salt and black pepper to taste

  • Optional: paprika and chopped parsley for garnish

Instructions

  1. Boil potatoes in salted water until fork-tender, about 10-12 minutes. Drain and cool.

  2. In a large bowl, combine mayo, mustard, and vinegar. Mix well.

  3. Add chopped celery, onion, pickles, and eggs to the dressing.

  4. Gently fold in the cooled potatoes. Season with salt and pepper.

  5. Chill for at least 1 hour. Garnish with paprika and parsley before serving.
