  • 1 cup cooked vermicelli noodles

  • 1/2 cup fresh mint leaves

  • 1/2 cup fresh cilantro

  • 1/2 cup fresh basil

For the Peanut Sauce:

  • 1/2 cup creamy peanut butter

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp honey or maple syrup

  • 1 tsp sesame oil

  • 1/4 cup warm water

  • 1 garlic clove, minced

  • 1/2 tsp grated ginger

Instructions

  1. Prepare the peanut sauce: In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, warm water, garlic, and ginger until smooth.

  2. Prepare the filling: Arrange all vegetables, herbs, and noodles on a platter.

  3. Assemble the rolls: Soak a rice paper wrapper in warm water until pliable. Place on a damp surface.

  4. Add a small amount of each filling ingredient to the center of the wrapper.

  5. Fold the sides over and roll tightly.

  6. Repeat with remaining wrappers.

  7. Serve: Cut the rolls in half and serve with peanut sauce.
