8 rice paper wrappers
1 cup shredded carrots
1 cup thinly sliced cucumber
1 cup shredded red cabbage
1 red bell pepper, thinly sliced
1 cup cooked vermicelli noodles
1/2 cup fresh mint leaves
1/2 cup fresh cilantro
1/2 cup fresh basil
For the Peanut Sauce:
1/2 cup creamy peanut butter
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp honey or maple syrup
1 tsp sesame oil
1/4 cup warm water
1 garlic clove, minced
1/2 tsp grated ginger
Prepare the peanut sauce: In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, warm water, garlic, and ginger until smooth.
Prepare the filling: Arrange all vegetables, herbs, and noodles on a platter.
Assemble the rolls: Soak a rice paper wrapper in warm water until pliable. Place on a damp surface.
Add a small amount of each filling ingredient to the center of the wrapper.
Fold the sides over and roll tightly.
Repeat with remaining wrappers.
