  • 2 lbs beef chuck, cut into 2-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 2 cups beef stock
  • 1 cup water
  • 2 tbsp tomato paste
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup pearl onions, peeled
  • 1 lb mushrooms, sliced
  • 2 tbsp all-purpose flour
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large pot or Dutch oven over medium-high heat. Season the beef with salt and pepper, then sear until browned on all sides. Remove and set aside.
  • In the same pot, add onions, carrots, celery, and garlic. Sauté until softened.
  • Stir in tomato paste and flour, cooking for 1-2 minutes. Gradually add beef stock and water, stirring to combine.
  • Return the beef to the pot and add bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until the beef is tender.
  • Add pearl onions and mushrooms in the last 30 minutes of cooking. Adjust seasoning if necessary.
  • Serve hot, garnished with fresh parsley, over mashed potatoes, rice, or crusty bread.

  • For enhanced flavor, cook the dish a day in advance and let it rest overnight; reheating allows the flavors to meld beautifully.
  • Use a heavy-bottomed pot for even cooking and to prevent sticking.
