  • 12 oz egg noodles
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Preheat oven to 350°F (175°C).
  • Cook egg noodles according to package instructions, drain, and set aside.
  • In a large skillet, heat olive oil over medium heat. Add onions and garlic, cooking until softened.
  • Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat.
  • Stir in tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  • In a large bowl, mix the cooked noodles, sour cream, and beef mixture.
  • Transfer to a greased casserole dish and top with shredded cheddar cheese.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let it rest for a few minutes before serving.
