Ingredients

  • 2 medium beets, roasted and peeled
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream (or coconut milk for dairy-free)
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz cooked pasta of choice

Instructions

  • Roast the beets until tender, then peel and chop them.
  • Blend the beets with garlic, cream, Parmesan (if using), olive oil, lemon juice, salt, and pepper until smooth.
  • Heat the sauce in a pan over low heat until warmed through.
