This Chicken Parmesan Pasta recipe is the ultimate comfort dish with crispy chicken, tangy marinara, perfectly cooked pasta, and gooey melted cheese. Made with simple ingredients and an easy method, it’s a great one-pan meal for busy weeknights or weekend family dinners.

  • 300g pasta (penne or rigatoni)
  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 egg, beaten
  • 2 tbsp olive oil
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil (optional)

Instructions

  • Cook the pasta according to the package instructions until al dente. Drain and set aside.
  • While the pasta cooks, slice the chicken breasts into thin cutlets.
  • In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  • Dip the chicken cutlets into the beaten egg, then coat evenly in the breadcrumb mixture.
  • Heat olive oil in a large skillet over medium heat. Cook the chicken cutlets for 3-4 minutes on each side until golden and fully cooked. Remove and set aside.
  • In the same skillet, add marinara sauce and heat it through. Stir in the cooked pasta until well coated.
  • Place the crispy chicken on top of the pasta, then sprinkle shredded mozzarella over everything.
  • Cover the skillet and cook on low heat for 2-3 minutes until the cheese is melted.
  • Garnish with chopped basil if desired, and serve hot.

Notes

  • For extra flavor, season the chicken cutlets with Italian seasoning before breading.
  • You can use whole-grain or gluten-free pasta to suit your preferences.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
