This creamy chicken tomato pasta recipe is a delicious and comforting dish made with tender chicken, al dente pasta, and a rich tomato-based sauce. It's a quick and easy meal perfect for weeknights or family dinners.

  • 300g pasta (penne, fusilli, or spaghetti)
  • 300g boneless chicken breast, diced
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 400g canned diced tomatoes
  • 2 tbsp tomato paste
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 100ml heavy cream
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish

Instructions

  • Cook the pasta in salted boiling water according to package instructions. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until golden brown, about 5-7 minutes. Remove from skillet and set aside.
  • In the same skillet, sauté the onion until soft and translucent, about 3-4 minutes. Add garlic and cook for another minute.
  • Stir in the diced tomatoes, tomato paste, paprika, oregano, and basil. Simmer for 10 minutes, stirring occasionally.
  • Reduce heat to low and stir in the heavy cream. Season with salt and black pepper to taste.
  • Add the cooked chicken back to the skillet and simmer for 5 minutes until heated through.
  • Toss the cooked pasta into the sauce and mix well to coat.
  • Serve hot, topped with grated Parmesan cheese and garnished with fresh parsley.

Notes

  • For extra creaminess, you can add an additional 50ml of heavy cream.
  • Use your preferred type of pasta; penne or fusilli works well.
  • Fresh basil leaves can be used as an alternative to dried basil for a more vibrant flavor.
