This creamy Cajun chicken pasta is a quick and flavorful dish that combines tender chicken, a rich cream sauce, and spicy Cajun seasoning.   • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts (sliced into strips)
  • 1 tbsp Cajun seasoning
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 garlic cloves, minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 8 oz penne pasta (or your choice of pasta)
  • Salt and pepper, to taste
  • Fresh parsley (for garnish)

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium-high heat. Season the chicken strips with Cajun seasoning and cook for 5-7 minutes, until browned and cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the bell peppers and sauté for 3-4 minutes until softened. Add the garlic and cook for 1 minute until fragrant.
  • Pour in the chicken broth and heavy cream. Stir and bring to a simmer. Cook for 3-4 minutes, until the sauce thickens.
  • Stir in Parmesan cheese until melted and creamy.
  • Add the cooked pasta and chicken back into the skillet, tossing to coat everything in the sauce. Season with salt and pepper to taste.
  • Garnish with fresh parsley and serve hot.

Notes

  • Adjust the amount of Cajun seasoning to suit your spice preference.
  • You can substitute half-and-half for a lighter version of the sauce.
