  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup uncooked small pasta (e.g., rotini or ditalini)
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp fresh basil, chopped (for garnish)

Instructions

  • Add chicken breasts, crushed tomatoes, diced tomatoes, chicken broth, garlic, onion, basil, oregano, red pepper flakes, salt, and black pepper to the Crockpot. Stir to combine.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender.
  • Remove the chicken, shred it using two forks, and return it to the slow cooker.
  • Add the uncooked pasta and cook on high for another 20-25 minutes until pasta is tender.
